  1. GLAZING PUFF PASTRY
  2. For a shiny golden surface, brush puff pastry with beaten egg wash or a combination of milk and sugar before baking. Glaze only flat pastry surfaces; never brush or allow the glaze to drip over cut edges, where it can prevent the layers from rising to full height. Baked puff pastry may, alternatively, be glazed with a light sugar syrup as it emerges hot from the oven.
